Santize Water Lines – How Often

We travel south for about 3 months in the winter and I sanitize the water lines when we get to an area where I am not worried about freezing up the fresh water system.  After sanitizing, we drink the water because we stay at parks that have a city water hookup.  I have never had any problems with us getting ill from drinking the water.  However, during the summer months in Michigan we might only go camping every couple of months.  My question is, should I sanitize after the unit sets for 2 or 3 weeks?  Do I need to sanitize the hot water tank?  What is the rule of thumb for sanitizing?
